Avocado Toast for Breakfast/Brunch

This is a yummy breakfast any time:  avocado toast on Abigails Oven REAL™ Sourdough Bread, but making it on our Jalapeño Cheddar takes it to a new level. And if you want the crunch of seeds, then make it on our #CountrySeed, which is loaded with pumpkin, sunflower, and flax seeds, which is my favorite base for avocado toast.
Just crisp up a slice of any of our bread and while it is in the toaster, mash an avocado. As soon as the toast pops up, cover the bread with avocado. Then to lift the flavor, sprinkle on some Tajin (mild chili/lime seasoning) and enjoy your toast.
Make it an open-faced breakfast/brunch sandwich with bacon, chopped green onions, and eggs, that guests will rave about. Just don't tell them just how easy it is to make!

Avocado Toast on Jalepeño Cheddar Topped with egg, bacon, and green onions
Avocado toast with eggs, bacon, and scallions is a delicious and satisfying breakfast or brunch dish. It's easy to make and can be customized to your liking. Here is a simple recipe for an open-faced breakfast/brunch sandwich that your guests will rave about. Just don't tell them just how easy it is to make!


Ingredients:

  • 2 slices of Abigail's Oven REAL Sourdough Bread (we recommend Jalapeño Cheddar, for a real tasty pop in your mouth, or Country Seed for extra crunch)
  • 1 ripe avocado, mashed
  • 2 eggs
  • 4 slices of bacon, cooked crisp
  • 2 scallions, chopped
  • Salt and pepper to taste

Instructions:

  1. Toast the bread.
  2. Spread the mashed avocado on the toast.
  3. Top with the eggs, bacon, scallions, salt, and pepper.
  4. Serve immediately.

Here are some tips for making a great avocado toast with eggs, bacon, and scallions:

  • Use ripe avocados. They should be soft but not mushy.
  • Cook the eggs to your liking. I like mine over easy, but you can also cook them sunny side up or scrambled.
  • Use thick-cut bacon for a more flavorful sandwich.
  • Be generous with the scallions. They add a nice flavor and crunch.
  • Season the sandwich with salt and pepper to taste.
  • Enjoy!

Here are some variations on the recipe:

  • Add cheese. I like to add a slice of cheddar cheese to my avocado toast.
  • Add tomatoes. Tomatoes are a great addition to avocado toast.
  • Add sprouts. Sprouts add a nice crunch and freshness to the sandwich.
  • Add your favorite herbs. I like to add a sprinkling of fresh parsley to my avocado toast.
